Whatever beef our customers need.At St. Helen’s, we have the proven capability of reacting quickly and efficiently to the specific needs of our customers. Our flexible structure and versatile protocols enable us to ensure that each customer receives exactly what they need. The majority of beef processed at St. Helen's Meat Packers is from the highest quality AAA and AA cattle with A and commercial grades also available. Most of our cattle are sourced from regional Ontario producers and are corn fed, which provides a rich texture and excellent marbling. Variety Meats.Consistent with the international demand, St. Helen’s offers a large selection of high quality beef variety meats. We offer products such as feet, tongue, heart, sweetbreads and livers. Grading.Grading is the process by which carcasses are classified into uniform groups of similar quality, yield and value. Grading is always performed by the Canadian Beef Grading Agency, an independent non‑profit corporation accredited by the Canadian Food Inspection Agency. Grade standards are set by the Canadian Federal Government, under the Canadian Agriculture Products Act. The minimum marbling standards for Canada Prime, Canada AAA and Canada AA are identical to those used for USDA Prime, Choice and Select respectively. Applying expert knowledge and using specialized tools, Canadian Beef Grading Agency graders classify each carcass using factors that are directly related to tenderness and juiciness.
